Avocado with Groundnut dressing (CAC)
2 avocados ripe but firm 15 ml (1 tbsp) lemon juice 30 ml (2 tbsp) shelled groundnuts or peanuts 2.5 ml (1/2 tsp) paprika 2.5 ml (1/2 tsp) cinnamon chili powder [cayenne], to taste salt, to taste fresh chives, to garnish.
Begin by carefully peeling the ripe avocados, ensuring to remove any skin remnants. Once peeled, cut each avocado in half to remove the pit, or stone, and then proceed to chop the flesh into bite-sized cubes. To prevent the avocado from browning and to enhance its flavor, generously sprinkle the cubes with fresh lemon juice and set them aside to allow the tangy taste to infuse.
Next, take your peanuts and grind them roughly; you can do this either by using a rolling pin or a grinder for just a few seconds, so they retain some texture. In a mixing bowl, combine the coarsely ground peanuts with your choice of spices, ensuring they are mixed thoroughly for a balanced flavor profile.
Now, take the seasoned peanut mixture and sprinkle it evenly over the cubed avocados. For an added pop of flavor and a touch of color, finely chop some chives and distribute them over the avocado and peanut combination. Finally, place the entire dish in the refrigerator to chill, allowing the flavors to meld together until you are ready to serve this delightful, refreshing treat.
